apple pie and cream


SERVES 6

INGREDIENTS
PASTRY

  • 450g plain flour
  • 250g 冷気/寒がらせるd unsalted butter, diced
  • 100g icing sugar, 精査するd
  • 1 medium egg yolk

FILLING

  • 50g raisins
  • 2 tbsp dark rum



  • 600g bramley cooking apples
  • 300g eating apples
  • 100g golden caster sugar
  • 1 tbsp plain flour

TO FINISH

  • milk, for 小衝突ing
  • extra icing sugar, for dusting
  • clotted cream, to serve

METHOD

  1. To make the pastry, place the flour and butter in a food 加工業者, give it a quick burst at high 速度(を上げる) to 減ずる it to a crumb-like consistency, then 追加する the icing sugar and give it another quick burst. 追加する the egg yolk and enough water to bring the dough together, 包む it in clingfilm and 冷気/寒がらせる for several hours or 夜通し. 一方/合間, soak the raisins in the rum in a small bowl for several hours or 夜通し.
  2. Preheat the oven to 180C/160C fan/350F/gas 4. H ave ready a 30cm oval gratin dish or suitable pie dish 同等(の). 許す the dough to come to room 気温 for a few minutes and then knead it until pliable. On a lightly floured surface, thinly roll out two thirds of the dough. Use this to line the base of the dish, 圧力(をかける)ing it in and letting the extra hang over the 味方するs. 削減する the 超過.
  3. Peel, 核心 and slice the apples. 投げ上げる/ボディチェックする these with the sugar and the flour, then mix in the soaked raisins and any residual アルコール飲料. Tip the fruit mixture into the pie dish.
  4. Roll out the remaining pastry and any trimmings to make a lid. 小衝突 the 縁 of the pastry in the dish with milk.   5. 小衝突 the pie all over with milk, dust with icing sugar and bake for 35-45 minutes until the pastry is lightly golden and the apples are tender. Leave to stand for 10 minutes and serve hot or warm with clotted cream.
  6. You can also reheat the pie for 20 minutes at 180C/160C fan/350F/gas 4.
