Recipe: Baked chilli and coriander pancakes

This savoury pancake recipe is perfect for those of you who don't have a 甘い tooth.

Baked chilli and coriander pancakes


Serves 4

INGREDIENTS

  • 1tbsp olive oil
  • 2 cloves of garlic, 鎮圧するd?
  • 500g minced beef?
  • 1 glass of red ワイン?
  • 400g tin of chopped tomatoes?
  • 1 heaped tbsp tomato pur?e
  • 1 red chilli, chopped with seeds, or 11/2 to 2tsp 乾燥した，日照りのd chilli flakes?
  • 1tsp each of ground cumin and coriander?
  • 1/2tsp ground cinnamon?
  • 1 beef 在庫／株 cube?
  • 400g tin 腎臓 beans, drained?
  • 1 bunch of coriander leaves, chopped?
  • 1 x basic pancake 乱打する with the 新規加入 of 2tbsp chopped coriander
  • 100g cheddar cheese, grated?

METHOD

To make the chilli, heat the oil in a saucepan and then saut? the onion and garlic over a medium heat until they are 軟化するd but not coloured.

増加する the heat and 追加する the mince, cooking quickly until it is browned, breaking 負かす／撃墜する any chunks of meat with a 木造の spoon. 注ぐ in the ワイン and bring to the boil.

動かす in the tinned tomatoes, tomato pur?e, chilli, cumin, coriander and cinnamon and 崩壊する in the 在庫／株 cube. Season with salt and pepper and bring to a simm er.?

Cover loosely with a lid and cook for 30-45 minutes. 動かす the 腎臓 beans and coriander into the chilli and cook 暴露するd for 10 minutes.

Preheat the oven to 220C/ gas 7. Make the pancakes によれば the basic pancake recipe (see left), stirring the coriander into the finished 乱打する. Stack the cooked pancakes between pieces of greaseproof paper while making the 残り／休憩（する）.

倍の each pancake in half and then half again, creating a triangle with 2 pockets.

Spoon some of the chilli into the pancake pockets and place in an ovenproof dish.

Scatter over the cheese and bake in the oven for about 20 minutes until golden. Serve the pancakes hot with any or all of the serving suggestions below:

  • Guacamole and/or sour cream
  • 1 onion, chopped
  • Green salad
  • Lime wedges
  • Jalapeno chillies

TIP: It's 井戸／弁護士席 価値（がある） making 二塁打 of the chilli so you have plenty for another day. 蓄える／店 in the fridge for a few days or 凍結する.
