Recipe: Pumpkin and 下落する risotto

下落する is THE herb to use with squash - and this 慰安ing risotto will warm you up a 扱う/治療する after a bonfire and 花火s.

INGREDIENTS

  • 4 small pumpkins?
  • 20g (1oz) butter
  • 1tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, 鎮圧するd
  • 300g (10?oz) risotto rice
  • 1 glass 乾燥した,日照りの white ワイン
  • 4 finely chopped 下落する leaves
  • 1ltr (1?pt) chicken 在庫/株
  • 80g (3oz) Parmesan, grated
  • 20g (1oz) butter
  • 8 下落する leaves to garnish

METHOD

削減(する) lids from the pumpkins, discard the seeds and 削減(する) the flesh into cubes. Heat the butter and olive oil in a pan, 追加する the onion and saut? for 3-4 minutes.

追加する the garlic and cook until soft. 追加する the risotto rice and cook, stirring, for 3-4 minutes. 追加する the white ワイン, pumpkin and chopped 下落する leaves. 動かす 井戸/弁護士席 to 連合させる.

徐々に 追加する 1 ladle at a time of hot chicken 在庫/株, stirring after each ladle, 追加するing the next one only when the liquid is almost 吸収するd. Continue until the rice is al dente and the pumpkin is soft (about 20 m inutes).

Season and 動かす in the Parmesan. Spoon the risotto into the pumpkin 'bowls' and garnish with 下落する leaves fried in butter, Parmesan shavings and a 新たな展開 of 黒人/ボイコット pepper.
