Not all 'gluten-解放する/自由な' foods sold in eateries are 現実に 解放する/自由な of the 潜在的に harmful protein, people with coeliac 病気 have been 警告するd.

研究員s, led by gastroenterologist Dr Jason Tye-Din at the Walter and Eliza Hall 学校/設ける of 医療の 研究 and 王室の Melbourne Hospital, analysed 158 'gluten-解放する/自由な' dishes from 127 無作為に selected food 商売/仕事s in Melbourne.
They 設立する nine per cent, or 14, 含む/封じ込めるd detectable gluten and were therefore not compliant with the Food 基準s Australia New Zealand (FSANZ) 鮮明度/定義 of gluten-解放する/自由な.
Of these 非,不,無-compliant dishes, nine 含む/封じ込めるd more than 20 parts per million (ppm) gluten, the upper threshold for 安全な gluten intake in Europe and the 部隊d 明言する/公表するs.
"One 商売/仕事 供給するd wheat-based foods (> 80 ppm gluten) にもかかわらず a gluten-解放する/自由な meal 存在 requested, 反映するing the 欠如(する) of understanding 報告(する)/憶測d by many people with coeliac 病気," the authors wrote.

They were also "特に ignorant" about spelt, which 含む/封じ込めるs gluten.
The good news was that 非,不,無-同意/服従 率s had 改善するd since earlier audits in 2014 and 2015, most likely 予定 to greater scrutiny by 環境の health officers and education.
"Indeed, four of five 発生地s of one burger chain were 非,不,無-compliant in 2014, but all were fully-compliant in 201 5 and 2016," the authors said.
"The 増加するing community 需要・要求する for gluten-解放する/自由な food may also be a driver of 増加するd 認識/意識性 の中で food service staff of the importance of 避けるing gluten 汚染."
The authors, with support of Coeliac Australia, say the 熟考する/考慮する shows education and training are 決定的な for food 商売/仕事s serving gluten-解放する/自由な food.
"改善するing training and knowledge about appropriate gluten-解放する/自由な food practices is probably the 選び出す/独身-most important step in 確実にするing the 安全な 配達/演説/出産 of gluten-解放する/自由な food, 特に for people with coeliac 病気, whose health depends upon it," they wrote.
