Serves 4

INGREDIENTS

  • 4 large 有機の eggs
  • 8 pancetta slices
  • 12 asparagus spears, trimmed
  • 1tbsp vinegar
  • 2tbsp butter
  • 150g (5?oz) baby leaf spinach
  • A pinch of freshly grated nutmeg
  • 2 English muffins, halved and lightly toasted and buttered
  • 8tbsp hollandaise sauce (see recipe, or use 瓶/封じ込めるd), to serve

How to make a quick hollandaise sauce

Melt 250g (9oz) of butter in a small saucepan.

Place 3 egg yolks, 2tbsp water and 2tsp lemon juice in a blender and 過程 until frothy.

METHOD

Poach the eggs by bringing a saucepan of lightly salted water to the boil. 追加する the?
