Little マリファナs of perfection: Lemon curd (and other citrus fruit curds)

Curds are a 広大な/多数の/重要な all-rounder to keep in the pantry

Curds are 甘い spreads, usually based? on citrus fruit. They 構成する beaten? eggs, sugar, fruit juice and zest, which? are cooked over a low heat until they thicken. They are then left to 冷静な/正味の to? form a soft, even-textured spread with? an 激しい flavour.

  • Makes 450g (1lb)
  • 3 lemons (or 4 limes or 1 medium-sized? pink grapefruit or 2 oranges), 有機の? or unwaxed
  • 200g (7oz) sugar
  • 3 eggs
  • A pinch of salt
  • 100g (3?oz) 軟化するd butter, diced
  • Using a lemon zester, 除去する the zest from the fruit before squeezing them ? you need about 120ml (4fl oz) of juice in total.

In a medium saucepan, 素早い行動 together the juice, zest, sugar, eggs and salt. Then 追加する the butter and place the saucepan over a low heat, 素早い行動ing the mixture 絶えず until the butter has melted. Turn up the heat and cook, still 素早い行動ing 絶えず, until the mixture thickens to a smooth, creamy consistency. The curd is ready when it coats the 支援する of a spoon.

When it is ready, pass the curd すぐに through a nylon sieve then 注ぐ it into an airtight コンテナ or a sterilised jar (see tip, above). The curd will keep for だいたい three weeks in the refrigerator.

Lemon curd with honey & cardamom

For this deliciously spicy and fragrant variation of lemon curd, 取って代わる 50g (1?oz) of sugar with 50g (1?oz) of honey. Follow the recipe, left, and at the same time as mixing all the 成分s together in the saucepan, 追加する three 鎮圧するd cardamom pods.
