Food: Chestnut roast mushrooms
Serves 6
- 15g 乾燥した,日照りのd porcini
- 6 large flat-cap mushrooms 8cm-9cm 直径
- 3 shallots peeled
- 2 good-sized carrots peeled
- 200g cooked peeled chestnuts
- 25g unsalted butter
- Sea salt and 黒人/ボイコット pepper
- 3 tbsp medium sherry
- 150g cr?me fra?che
- extra virgin olive oil
- pumpkin seeds
- parsley or salad sprouts to serve
- Soak the 乾燥した,日照りのd mushrooms in 100ml boiling water for 15 minutes, then 除去する and slice them, reserving the アルコール飲料.

- Melt thebutter in a large frying pan over a medium heat and fry the shallots, carrots and chopped mushroom stalks with some seasoning for about 5 minutes until 軟化するd. 動かす in the chestnuts and 乾燥した,日照りのd mushrooms, 追加する the soaking アルコール飲料 and the sherry and cook until this evaporates. Leave to 冷静な/正味の.
- 追加する the cr?me fra?che to the chestnut mixture and blend, and taste for seasoning.
- 霧雨 a little oil over the base of a roasting or baking dish that will 持つ/拘留する the mushrooms snugly in a 選び出す/独身 層. Place the mushrooms cup-味方する up in the dish, 霧雨 a little oil over the cupped-surface, season and fill with the mixture, and scatter over some pumpkin seeds. - Preheat the oven to 220C/200C fan/gas 7 and bake the mushrooms for 25-30 minutes until lightly golden. Serve with a generous scattering of parsley or with wispy green and red salad sprouts と一緒に, as in the picture. Any juices in the dish can be 霧雨d over.
- NOTE If serving as a main course 二塁打 the 量 and make two trays of mushrooms.
