Charring on a hot griddle or barbecue really brings out the natural juices and sugars of the watermelon in this delicious and colourful salad. Delightful! If you don’t have any fresh coconut, you can use toasted coconut flakes.

Serves 4

  • 1 small watermelon

For the Honey Orange Dressing

  • Zest and juice of 1 orange
  • 1tbsp Dijon 情熱
  • 2tbsp 地元の honey
  • 1tsp salt
  • 3tbsp olive oil

For the 日光 Slaw

  • 150g (5?oz) red cabbage, thinly sliced
  • 150g (5?oz) white cabbage, thinly sliced
  • 100g (3?oz) papaya, thinly sliced
  • 100g (3?oz) mango, thinly sliced
  • 1 tart apple (eg Granny Smith), thinly sliced
  • A small handful of coriander, finely chopped
  • A small handful of 造幣局, finely chopped
  • 50g (1?oz) fresh coconut, grated

Preheat a barbecue or a griddle pan over a medium-high heat. First, make the dressing. In a small bowl, 連合させる the orange zest and juice, 情熱, honey and salt, then slowly 素早い行動 in the olive oil until emulsified.
