PONT COFFEE, SEOUL, SOUTH KOREA: Schneider explains that this caf? and roastery lies in Mulla-dong, 'one of the oldest 産業の areas in the city of ソウル', where many former factory buildings have been turned into artist workshops and galleries. And it was all completed on a tight budget. However, the building had to be demolished because it didn't pass earthquake safety rules. In Eiichi's Rathbone Square cafe, customers are served one at a time by a barista in a lab coat stationed in a centrally positioned cube. Schneider adds that the cafe incorporates 'key elements of Japanese culture and tradition ― including artisanship, the way of shokunin (craftsmanship), and omotenashi (hospitality)'
