'Think about candies like 弾頭s and Sour Patch Kids,' Professor Hayes said.

'The market tells us that there must be some people who enjoy them into adulthood, but now we have an 見積(る) of how many.'

In the 熟考する/考慮する, the team 手段d the 返答s of 143 American adults and 350 Italian adults to さまざまな levels of citric 酸性の.

The 関係者s were asked to 率 the intensity and liking of a 範囲 of 見本s of 変化させるing sourness.

For both the Italian and American cohorts, the 研究員s discovered three 際立った patterns of 返答.

Next, around 12 per cent were in an 中間の group, and showed a more muted 減少(する) in liking with more sourness.

Finally, around 12 per cent were in a strong 肯定的な group, in which liking 増加するd with more sourness.

'Most people didn't like sourness, so if you just 普通の/平均(する) across the entire group, then you'd 結論する that more sour equals bad,' Professor Hayes said.

'But if you dig deeper, you find 抱擁する differences across people.'

Both the Italian and American groups showed 類似の 割合s, which 示唆するs that these may be stable across cultures, によれば the 研究員s.

'Italian food culture and American food culture are so wildly different,' said Sara Spinelli, a 研究員 from the University of Florence in Italy and first author on the paper.

WHAT IS UMAMI??

Umami is the Japanese word for the fifth basic sense of taste, after bitter, salty, sour and 甘い.
