Serves 8

For the cake

  • 200g (7oz) plain flour
  • 2 わずかに heaped tsp bicarbonate of soda
  • 100g (3?oz) walnuts, 概略で chopped, 加える some extra walnut halves to decorate
  • 250g (9oz) runny honey
  • 100g (3?oz) carrots, peeled and finely grated
  • 180g (6?oz) pitted dates, chopped
  • 2tsp ground cinnamon
  • 1tsp grated nutmeg
  • 100g (3?oz) butter, 加える extra for greasing

For the buttercream icing

  • 250g (9oz) unsalted butter, at room 気温
  • 500g (1lb 2oz) icing sugar, 精査するd
  • Finely grated zest of 1 orange, 井戸/弁護士席 washed
  • 100ml (3?fl oz) 二塁打 cream

For the carrot confit (optional)

  • 150g (5?oz) golden caster sugar

Preheat the oven to 180°C/fan 160°C/gas 4. Grease a 22cm loose-底(に届く)d cake tin and line the base and 味方するs with baking paper.?

The best way is to grease the tin lightly, then line with baking paper ? greasing first helps to keep the paper in place.?

Put the plain flour, bicarbonate of soda and the 概略で chopped walnuts in a large bowl and 始める,決める it aside. Then put the honey, carrots, dates, cinnamon, nutmeg and butter in a pan and 追加する 200ml of water.?

Place the pan over a gentle heat and let everything melt together, then simmer for 5-7 minutes. Tip the mixture into a clean bowl and leave to 冷静な/正味の until lukewarm, then 動かす in the flour, bicarb and walnuts.?

I’m all for breaking 支配するs but there are some kitchen habits I stick to.

Buy everything as fresh as possible. Supermarkets have their place, but look at 地元の farms and markets too.

Be organised when 準備するing food. Keep your 成分s on your left and prepped food on your 権利.

When 準備するing 成分s, finish one 仕事 before starting the next, ie. 肌 all your tomatoes, then chop ? don’t peel one, chop it, then go 支援する to peeling. It’s just not efficient.

(疑いを)晴らす up as you go. Mess is stressful.?
